With Easter coming up, I’ve been leaning into meals that feel simple, fresh, and colorful. I wanted to share two things I’ve made this week that would work beautifully for a weekend gathering—or just a quiet dinner at home.
First: whole radishes served with salted butter and flaky sea salt. It’s a very French thing (radis au beurre) and one of my favorite low-effort starters. I serve them with the greens on, set out a pat of softened cultured butter (homemade if I’ve made some, but good store-bought works too), and a little dish of flaky salt. Done.
Before serving, I soak the radishes in ice water—it brings back any wilted greens and makes everything extra crisp. I do this with lots of vegetables and herbs, especially if they’re looking a little tired in the fridge.
